What is a simple project?

Basically you can do anything you want if the hardware that's on the STK500 and 502 is adequate for your needs. You can also hookup some external hardware, say, a relay board, a radio transceiver, GPS receiver, or some fancy flow sensor.

But these links explains about a different processor.
Can I still use my stk500 & 502?

IIRC STK502 engine is Atmega169, same as in AVR Butterfly.
Thus many (if not all) the Butterfly projects can be implemented on STK502.
See "Projects" section for other GPS solutions.
Others can virtually be ported (modified) to work with similar or, alternatively, higher rank processors.
