Is there a way to use the simulator in AVR Studio to output the UART in a useful way?
Maybe to interface with a terminal program on the same PC that AVR Studio is running on?

You could certainly do it with Keil for the 8051. I've never tried with Atmel Studio - probably because, nowadays, with the easy and low-cost availability of on-chip debug hardware - there seems little point ...
I'm using Atmel Studio 7 version 7.0.1417 to program in assembly. So far, I have not built the hardware and only have an Olimex AVR-ISP-MK2.
The device I plan to use is an ATtiny1634.
