What sensors are used in flame detector ?
Done 30 year ago, perhpas it is new technique but the principe was a high voltage and et sonde between flame & case.

You can use your fingers to detect flames if you wish!

The ones commonly used in heating appliances are usually thermo couples...
As has been suggested by the many replies, there are several different ways of 'detecting' a flame, and different kinds of 'sensors' to along with each method.
Before anyone can give you a really meaningful answer, you need to tell more about your specific requirements.

this is optical flame detector sensor for CNG Station Compressor Motor
in the industrial sensor , used IR + UV + thermal IR (American Sensor)
and used only UV in (Russian Sensor) .
i'me looking for new idea in flame detector sensor , because UV sensor is very expensive and i can't use it in this project.

What is "CNG" ?
Don't assume that complete strangers will automatically understand what might be "everyday" abbreviations to you!
Compressed Natural Gas.
Semiconductor UV sensors "might work", but just barely. The industrial tube sensors, such as the 'mini peeper' series from Honeywell, operate at wavelengths shorter than 300 nanometer. Solid state sensors in that range are available, but prices approach the cost of the industrial sensor... and that's before considering lenses, mounts, amplifiers...
Given the likely disastrous results if anything would go wrong, I would stick with the tried and true. It will be an interesting experiment though, in other circumstances.
Being CNG there is regulations applying to that application. Anything electrical must be intrinsically safe or otherwise protected from sparking or high surface temperatures. Anything for that application is going to be expensive due to the certification requirements.
The flame detector in my central heating boiler consists of a single metal electrode that touches the flame. Must be generating a small voltage.

Detecting fire by camera would probably need a ir camera. These are significantly more expensive than a uv sensor.
