Uhmmm... You can't.

If Atmel does no longer produce them, and the last stocks at the distributors and resellers are depleted, then of-course you can not buy them. The search at Findchips looks at about 30 authorized suppliers. Only two of them (DigiKey and Mouser) have u2741b listed, but both show zero stock. Mouser also shows it as "End of life"/"Scheduled for obsolescence and will be discontinued by the supplier".
