I'm looking for the most simple monochrome e-paper touch display that's compatible with Arduino Mega.

Minimal resolution is 160x128. It can be any aspect ratio, but I prefer it being 4:3 or 3:4.

By simple, I mean that it should have not so much wires for temperature/power regulation, but have that already built-in in the chip.

Though not e-paper and not touch there's Sharp Memory LCD that's very low current.

IIRC Adafruit has driver source code for one.

Gabotronics is also using a Memory LCD.
